Founded in 1987, Castellroig produces some of the best Cava in Spain, well recongnised by world critics and magazines. Castellroig Cava is identified as unique creations of limited production. Base wines of each two traditional varieties are vinified separately. Thorough tasting and selection for their blending is carried out to undergo the traditional cava method. Organic, Hand harvested. Fermentation via indigenous yeasts in stainless steel tanks, on the lees 36 months to gain further complexity.
