釀造工藝 Vinification:

只收成成熟最好葡萄來釀造,所以產量不多。冷浸在6-8度的水5天左右,然後加熱並用精選的酵母進行發酵,快速而熱的發酵,有助於釀造優雅和平衡的葡萄酒。在發酵後,在舊法國橡木桶中進行乳酸發酵。
The low yielding vines were harvested at optimal ripeness, with each clone being made separately. The parcels were cold macerated at 6 – 8 degrees for around five days before being warmed and inoculated with selected yeasts. A fast, hot fermentation proceeded with regular hand plunging which has helped to craft a wine with elegance and balance. The parcels were gently pressed off after fermentation, with a portion spending some time in second year French oak barrels while undergoing malolactic fermentation. The parcels then underwent a light fining, prior to blending, filtering and bottling.

品酒筆記 Tasting Notes:

充滿了紅色水果和香料香氣。口感柔順而且果味豐富,帶有深色櫻桃味,鮮明的酸度和柔和的單寧。適合與鴨,羊肉,牛肉配襯。
The nose is brimming with lifted red fruits and a touch of savoury spice. The palate is supple yet juicy with dark cherry flavours, fresh acidity and a soft tannin finish. This is matched well with duck, lamb, venison and veal dishes.
